Ingredients

  • tonic water
  • 1 galia melon
  • fresh mint
  • vodka
  • frozen raspberries

Tip

  1. Blend 1 ripe galia melon, deseeded, peeled and roughly chopped, in a food processor until smooth.

Method

  1. Finely chop ½ x 20g pack fresh mint, stalks removed, and stir into the melon crush with 1-2 tbsp caster sugar, to taste.
  2. Spoon 3-4 tbsp melon crush into each glass along with a few frozen raspberries (from 300g pack Waitrose British Frozen Raspberries). Add 1-2 tbsp vodka to each glass, then top up with Waitrose Tonic Water, and stir.
